Shakschuka Tomato and Egg Summer Dish

Shakschuka

Shakshuka or egg and tomato dish is a simple easy recipe that I usually prepare during summer especially when I’m in a rush.

I hope you enjoy this simple  Shakhchuka dish.

Ingredients for Shakshuka: 

For 2 persons you need:

  • 5  tomatoes, washed and sliced into small pieces
  • 3 cloves of garlic ( minced)
  • Salt
  • 3 eggs
  • 1 splash of paprika
  • 1 TSP of black pepper
  • 3 tablespoons of olive oil
  • Chopped parsley
  • 3 tablespoons of cooking oil
  • Cheddar cheese

Instructions:

-In a well-heated pan put 3 tablespoons of olive oil with 3 tablespoons of cooking oil, add tomato, salt and let the tomatoes cook on a medium heat.

-stir tomatoes from time to time until it becomes soft and absorb its water.

-Add garlic, parsley, a splash of paprika, and black pepper. Stir for 1 minute.

-Now add the salted and scrambled mixture of eggs to tomatoes and let the mixture to simmer for 4 minutes.

-Add cheddar cheese and mix your shakshuka until the eggs are well cooked.

-Finally, garnish your shakshuka with chopped parsley and grated cheese.
